Sunday’s our day to pick up milk from Mayval Farm in Westhampton, but this week I hadn’t gone through it as fast as usual. Last week’s milk was dated best by today! Not to worry, I thought fast, pulled out some rice and eggs, and made rice pudding!
I doubled the original recipe, then halved the nutmeg, used 3/4 the recommended sugar, put in some extra raisins, and added 1 tsp of cinnamon. I just can’t leave well enough alone. It took longer to bake with the doubled amounts, obviously, but I didn’t time it too closely, just kept checking on it after the first hour. It came out great!
